Light & Savory Morning Veggie Bowl

This savory veggie breakfast bowl is a simple, flexible way to start your morning with fresh flavor and easy ingredients you already have.

Ingredients for a Savory Veggie Breakfast Bowl

  • 1 cup light base (choose one):
    • cooked pasta
    • rice
    • quinoa
    • or Angel Hair hearts of palm pasta (for a lighter option)
  • 1 cup mixed vegetables (kale, string beans, bell peppers, corn, peas, or what you have)
  • ½ cup tomatoes (canned or fresh, lightly broken up)
  • 1–2 teaspoons olive oil (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Dried basil
  • Dried oregano

Optional:

  • 1 egg (boiled or fried) for added protein

 Instructions

  1. Heat a pan over medium heat and add a small amount of oil if using.
  2. Stir in the tomatoes and let everything come together.
  3. Add your base (pasta, rice, or grains) and gently mix.
  4. Season with salt, black pepper, garlic powder, basil, and oregano.
  5. Cook for a few minutes until everything is heated through.
  6. Serve warm. Add an egg on top if you’d like.
