Lentils, vegetables and creamy potatoes turn everyday ingredients into a hearty baked dinner.

Ingredients

For the Mashed Potato Topping

  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 1/2 cup unsweetened plain plant milk, warmed
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper

For the Lentil Filling

  • 1 tablespoon extra virgin olive oil
  • 8 ounces cremini mushrooms, finely chopped
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cracked black pepper
  • 1 tablespoon low-sodium soy sauce
  • 1 1/2 cups low-sodium vegetable broth
  • 3 cups cooked brown lentils, drained well
  • 1 cup frozen green peas
  • 1 cup frozen or drained canned corn
  • Salt to taste
  • 1/4 cup finely chopped fresh parsley, divided

Instructions

1. Cook the Potatoes

Place the potato chunks in a large pot and cover them with cold water. Bring to a boil, reduce the heat slightly and cook for about 15 to 20 minutes, or until the potatoes are very tender when pierced with a fork. Drain well and return the potatoes to the warm pot.

2. Mash the Potatoes

Add the warmed plant milk, olive oil, salt and black pepper. Mash until creamy and mostly smooth. If needed, add another small splash of plant milk until the potatoes are soft enough to spread easily. Set them aside.

Try not to conduct too much quality control with the spoon. We still need enough potatoes for the pie. 😂

3. Heat the Oven

Preheat the oven to 400°F (205°C). Lightly coat a large baking dish with a thin layer of olive oil.

4. Brown the Mushrooms

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the finely chopped mushrooms. Cook for 5 to 7 minutes, stirring occasionally, until they release their moisture and begin to brown.

Allowing the mushrooms to brown rather than steam gives the filling deeper savory flavor.

5. Add the Onion and Carrots

Add the diced onion and carrots to the skillet. Cook for another 5 to 6 minutes, stirring occasionally, until the onion softens and the carrots begin to become tender. Add the minced garlic and cook for about 30 seconds, just until fragrant.

6. Build the Savory Filling

Add the tomato paste, dried thyme, rosemary, smoked paprika and black pepper. Stir and cook for about 1 minute. Add the soy sauce and vegetable broth, stirring well to combine everything. Bring the mixture to a gentle simmer.

7. Add the Lentils and Vegetables

Stir in the cooked brown lentils, peas and corn. Simmer uncovered for approximately 5 to 8 minutes, stirring occasionally, until the vegetables are tender and the liquid has reduced into a thick, moist filling.

The mixture should hold together when spooned. It should not look watery or soupy. Stir in about half of the chopped parsley. Taste and adjust the salt or pepper as needed.

8. Assemble the Shepherd’s Pie

Transfer the lentil filling to the prepared baking dish and spread it into an even layer. Spoon the mashed potatoes over the filling. Carefully spread the potatoes all the way to the edges of the dish. Use the back of a spoon or a fork to create ridges and small peaks across the surface.

Those peaks aren’t just decorative. They’re applying for the golden-brown department. 😂

9. Bake

Place the baking dish in the preheated oven. Bake uncovered at 400°F (205°C) for 20 to 25 minutes, until the filling is bubbling gently around the edges and the potatoes are lightly golden on top.

For additional browning, place the dish briefly under the broiler at the end, watching it continuously so the potato peaks brown without burning.

10. Rest and Serve

Remove the shepherd’s pie from the oven and let it rest for 10 minutes before serving. This gives the filling time to settle and makes the portions easier to serve. Sprinkle with the remaining finely chopped parsley. Spoon generous portions onto plates and serve warm.

Yum’s Tips

Use brown or green lentils. They hold their shape better than red lentils and give the filling more texture.

Drain the lentils well. Excess liquid can make the filling too loose.

Brown the mushrooms first. Letting their moisture cook away develops much more flavor than simply adding them to the filling.

Keep the filling thick. If it still looks watery after adding the lentils, simmer it a few minutes longer before assembling the pie.

Warm the plant milk. Adding warm rather than refrigerator-cold milk helps keep the potatoes hot while you mash them.

Seal the edges with potatoes. Spreading the topping to the edge of the dish helps create a proper layer over the filling.

Let it rest. Ten minutes feels terribly unreasonable when dinner smells good, but the pie will serve much more neatly. 😂

Easy Variations

Use sweet potatoes: Replace some or all of the Yukon Gold potatoes with sweet potatoes for a naturally sweeter topping.

Add celery: Diced celery can cook with the onion and carrots for another traditional savory flavor.

Change the mushrooms: White button mushrooms work well in place of cremini.

Add more greens: Stir chopped spinach or kale into the lentil filling before assembly.

Add a little heat: A pinch of crushed red pepper flakes can give the filling gentle warmth.

Use leftover mashed potatoes: If you already have enough mashed potatoes in the refrigerator, shepherd’s pie has just volunteered to help use them.

Storage and Reheating

Allow leftover shepherd’s pie to cool before covering and refrigerating it. Individual portions can be reheated in the microwave until thoroughly heated.

For a larger portion, cover the baking dish and warm it in a moderate oven until heated through, uncovering near the end if you’d like to refresh the surface of the potatoes.

If preparing the shepherd’s pie ahead, assemble the cooled filling and potato topping in the baking dish, cover and refrigerate. Bake when you’re ready, allowing additional time because the dish is starting cold.

Nutrition Highlights

Brown lentils provide plant-based protein and fiber, while mushrooms contribute savory flavor and additional nutrients.

Potatoes provide carbohydrates along with potassium and other nutrients, while carrots, peas and corn add vegetable variety, color and texture.

Using olive oil and unsweetened plant milk keeps the mashed potato topping simple while still giving it a creamy texture.

Perfect Pairings

Cozy Lentil Shepherd’s Pie is hearty enough to stand on its own, but a simple green vegetable makes an easy partner. Try steamed green beans, roasted broccoli or sautéed spinach.

A crisp leafy salad with a bright vinaigrette can also provide a fresh contrast to the creamy potatoes and savory lentil filling.

For an especially cozy cooler-weather meal, serve it with your favorite warm unsweetened tea.
